Carolina Style Pulled Pork
Ingredients
4.5 lb pork butt
2 x 7 oz pack Street Kitchen Tangy Mustard Carolina Style BBQ seasoning and sauce
Burger buns, coleslaw and pickles to serve
Method
Sprinkle and rub the Carolina Style BBQ seasoning sachet evenly over pork. If time permits, leave to stand for 30 minutes while setting up the BBQ grill.
Arrange a metal wire rack inside a large foil tray and place pork on top.
Preheat BBQ 400°F with the lid down.
Place tray into BBQ so that the heat source is not directly under the roast (indirect heat). Close the lid.
Cook 1 ½ hours, turning over every 30 minutes for even browning.
Remove pork from tray and wrap tightly in 2 layers of foil to completely enclose.
Reduce heat to 300°F and return covered pork to BBQ. Close lid again and cook for a further 3 – 3 ½ hours or until the internal temperature of the meat is 165°F. Remove and rest for 30 minutes.
Pull pork with 2 forks. Pour over ¾ of the finishing sauce and toss to coat evenly.
Serve in burger buns with coleslaw and pickles, drizzled with remaining sauce.
