You would hardly believe the convoluted story behind the most popular of Thailand’s street cuisines. From the fragrant calls of a hot- fired wok working a night market stall or an up market restaurant; it’s just packed with sensory delights that result in one of the most popular and flavorsome meals Thailand has on offer.

You will need

  • 1.3 lb Diced Chicken Pieces
  • 7 oz Pad Thai Rice Noodles
  • 4 Scallions, Sliced
  • 1 Medium Carrot, Shredded
  • 2 Eggs, Lightly Beaten
  • 1 Cup Bean Sprouts (optional)
  • 1 Handful Cilantro, Chopped (optional)
  • Crushed Peanuts (optional)

Cooking suggestions

  1. PREP: Prepare rice noodles according to pack instructions.
  2. COOK: Flash fry chili and onion flakes in hot and well-oiled wok for 5 seconds. Add chicken and fry for 3 minutes or until well seared. Push chicken to side, add beaten egg, allow to set for a minute. Add vegetables and stir fry contents for another minute. Add prepared noodles and toss through with other ingredients.
  3. TOSS: Pour sauce into wok, stir until noodles are well coated and sauce is well heated. Drizzle finishing sauce to serve. Optional: Garnish with crushed peanuts and chopped cilantro.

Chef’s Tip
Create a combination Pad Thai using a mix of chicken, shrimp and tofu. Garnish with wedges of sliced lime and crushed peanuts.
