Moroccan Lemon Chicken

There is a beautiful mystery to the Moroccan medinas; maze like streets, mosaic walls, hardworking stall vendors, fine wares, hectic crowds, and the wafting scent of spices, foods and mint tea. It’s like a kaleidoscope reflecting the people, cultures and nations, which have influenced day-to-day life on these busy streets. And while food from the souk is invitingly good, you may find, too soon, you have reached your fill of sweet mint tea, delicious snacks and bustling cafes. Like locals you’ll romance over a warm spiced dish served fresh with the gossip and chatter of home. If life was less busy you may take the time to seek out the precise ingredients for a Moroccan meal, or you could simply enjoy that we have done the legwork; all you have to do is add your choice of fresh ingredients and cook with joy.

You will need

  • 1.3 lb Diced Chicken Pieces
  • 1 Medium Onion, Sliced
  • ½ Cup Pitted Green Olives, Halved (optional)
  • 2 Cups Cooked Couscous to Serve

Cooking suggestions

  1. COAT: Mix Ginger & Garlic paste through diced chicken and set aside while you chop your vegetables.
  2. SEAR: Flash fry spices from the pack in hot and well-oiled medium size saucepan for 5 seconds. Add chicken and fry for 3 minutes or until seared on all sides. Add onion and fry for a further 2 minutes.
  3. SIMMER: Add cooking sauce to pan, stir contents, reduce heat to low, cover pan with lid and simmer until meat is fully cooked (approx. 20 minutes). Stir in olives (optional) and heat through. Serve immediately on a bed of Couscous.

Chef’s Tip
For a more traditional meal prepare dish in a tagine and serve on a bed of spiced couscous. Also delicious as a vegetarian meal, just use your choice of vegetables.
